Since Mr. L is getting bigger and bigger each day, I’ve started feeding him 3 meals + 2 snacks a day.  He usually has yogurt and some sort of berry for breakfast but he is really into feeding himself these days.  I scratched my head thinking of a good breakfast and thought..aha pancakes.  One problem is that pancakes have an egg in the batter and that’s not good for Mr. L yet.   Well that’s not too big of a problem when you have the internet and can search vegan recipes.  So with a click of the mouse and a swirl of the spatula, baby pancakes were born.

Ingredients:

1 cup flour

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup milk

1/2 cup applesauce

dash of cinnamon

Combine all the ingredients in a bowl and mix them up!  Cook on stove top like regular ole pancakes.

The baby verdict:

Lucas loved them!  The recipe made about 20 mini pancakes so I’m just going to freeze the rest and defrost when he is hungry.

Any other baby breakfast suggestions out there?  He loved feeding himself these pancakes and he actually ate two of them.  Mom for the win!!!

    my willa loves pancakes! runners world had a big article about pancakes in a recent issue – i love their recipe and have been using it since it came out. it has oats, and cornmeal and wheat flour. not much sugar and i use coconut oil. they store well in the freezer and make for perfect, on the go snacks.

    i’m so impressed that L is eating pancakes already! he’s such a big boy!

  2. Interesting- here they say that the old advice about egg is outdated! But everyone ALWAYS has different ideas about everything baby!

    Ohh saving this recipe! I didnt know babies cant have eggs! Good to know! Even baked into something? He looks so happy! Food is going to be fun! Excited for this stage!

      Our ped said no eggs in food till 9 months and no plain eggs till 12 months. She said it increases the chance for allergies.
