I love pancakes. Not like”I heart pancakes they make a delicious breakfast” but “I love pancakes and I will die if I don’t have them right now”. What’s not to love about fluffy circles of goodness smothered in maple syrup and fruit? Absolutely nothing :).
Since Mr. L is getting bigger and bigger each day, I’ve started feeding him 3 meals + 2 snacks a day. He usually has yogurt and some sort of berry for breakfast but he is really into feeding himself these days. I scratched my head thinking of a good breakfast and thought..aha pancakes. One problem is that pancakes have an egg in the batter and that’s not good for Mr. L yet. Well that’s not too big of a problem when you have the internet and can search vegan recipes. So with a click of the mouse and a swirl of the spatula, baby pancakes were born.
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup milk
1/2 cup applesauce
dash of cinnamon
Combine all the ingredients in a bowl and mix them up! Cook on stove top like regular ole pancakes.
The baby verdict:
Lucas loved them! The recipe made about 20 mini pancakes so I’m just going to freeze the rest and defrost when he is hungry.
Any other baby breakfast suggestions out there? He loved feeding himself these pancakes and he actually ate two of them. Mom for the win!!!November 30, 2012
