Playdate Blueberry Muffins

Today’s Workout: 5 mile stroller walk (I needed a running rest day, sore legs)

Lucas and I are officially joining the ranks of the cool kids because we got asked for a playdate. Last week we were out doing our morning stroll when I heard my name being hollered from a minivan. Lo and behold, an old college friend was yelling at me and I quickly met her in the preschool parking lot. Neither of us had any idea that we both live in this tiny NJ town and were so excited to reconnect. I must admit that I, like any good nerd, immediately called my husband to tell him of the run in and my excitement.
Since we want to be asked to hang out again, Lucas and I are heading to her house bearing gifts of baked goods. We are not above bribing people to be our friends. ha! Wegmans had a big box of beautiful blueberries on sale so muffins it is. The recipe is one from an inn my mom and I stayed out back in 2009.
Playdate Blueberry Muffins (aka Blantyre Inn Blueberry Muffins)
1 cup blueberries (I used 2.5 cups instead, I like lots of blues)
4 cups all purpose flour
3 teaspons baking powder
1/2 teaspoon salt
1 3/4 sticks butter, at room temperature
1 2/3 cup sugar plus 3 Tablespoons for sprinkling
1 1/3 cup milk
Preheat oven to 375 degrees
1. Toss blueberries with 1 tsp of flour in a small bowl.
2. In another bowl, mix flour, baking powder & salt.
3. Cream butter & 1 2/3 cup sugar until pale & fluffy.
4. Add the eggs and include 1 Tablespoon of flour mixture with each addition.
5. Stir in the rest of the flour mixture and the milk. Fold in the blueberries.
Fill each muffin cup and top with a sprinkle of sugar. Bake for 20 minutes or until stick comes out of muffins clean.
And we are off for some fun! I hope I don’t act too nerdy and Lucas doesn’t explode his diaper***. We need to make a good impression!
